fine dining at mayette & serge’s lovely home. trying to remember what we had for dinner. too bad i forgot to take pictures of the different cheeses and dessert! i obviously cleaned my plate so i have nothing to show. :) bon appetit!

appetizer: wasabi peanuts

entree: homemade foie gras (made by Serge’s son) with chocolate truffle served with bread

salad: avocado and pomelo

main course: roasted leg of lamb with mint sauce, baby potatoes, and stewed vegetables

cheese: Gruyere, Parmigiano, and Vacherin served with cheese marmalade

dessert: Maridel’s Frozen Lemon Meringue

white wine from Luxembourg; i forgot where the red wine was from. (i’m obviously not a wine connoisseur :))

my cousin mariz’s magic in setting up everything for her brother’s celebration after he was conferred with the degree of doctor of humanities (business administration) by the university of san agustin, iloilo city.

finally, after 19 years, injap’s dream has come true!

may this spawn a 2nd, 3rd, 4th, etc. restoration projects within the city. i’m so glad that the old beauty and charm of iloilo city especially along calle real will once again come out of the shadows of neglect and ruin.

Have you seen Iloilo City’s version of the Statue of Liberty? Atop our City Hall is the Lin-ay Sang Iloilo, a 20-ft bronze statue, an obra maestra of one of Iloilo’s Living Legends, my beloved theatre director (UP Teatro Amakan) under whose tutelage i came out of my shell, and now my maninoy (godfather) when i got married - Professor Edward D. Defensor.
